Vinification: Strict yield control through rigorous pruning and thinning. Hand harvesting (about 3 weeks before the red wine grapes) in the cool morning hours. Instant whole bunch pressing to obtain a wine with vivid color, good acidity and freshness. Afterwards natural primary treatment by cold sedimentation. Slow fermentation in temperature-controlled stainless steel tanks. 5 months fine yeast contact, gentle treatment during vinification and natural cold stabilization before bottling.
